I hope this helps someone because of all the searches I've completed on the "Something Went Wrong" issue, corrupt files were never discovered as the culprits. Google Photos without any problems, but these two files became corrupted somehow.

I believe that this was possibly a synced edit from Google Photos. The two files that were corrupt did not have the typical naming convention found in iPhone photos such as IMG_1234.jpg but it was something like WKNZ1234.jpg. Now I was able to import photos without any error messages. Went through the same process as above and after that there were no more corrupt files found. This time it got to about 50% but the same thing happened. So I just deleted this bad file from the iPhone using File Explorer. To that file on the iPhone in the file explorer, it was a JPEG file but it couldn't be opened. I could tell by the "copying" dialogue box which file it stopped copying on. Well, about 15% into the copying, it stopped because there was a corrupted file. I then copied all those APPLE folders into a standalone folder on the Desktop. These are the directories that contained all of my photos and videos. There I found directories labeled 100APPLE, 101APPLE, 102APPLE, etc. Next I accessed the iPhone via the File Explorer.

Every time I tried to import photos using the Windows 10 Photos app, it would begin importing photos but after about 15% it would stop and give me the "Something Went Wrong" message and abort the import process. The problem turned out to be with a couple corrupt files on the iPhone that were preventing the photo import from completing. I had a similar problem and searched endlessly but none of the solutions would help me.
